PEZZETTONI/CRUSHED TOMATO STIR FRY
Preparation Time: 30 min
Yield: One serving per pork tenderloin
Have ready one serving per person of Oven Rice
Dice pork tenderloin ( one per serving ) to sugarcube size
Lightly brown pork in Olive Oil, onion salt and Ginger
Add to pan 1/8 cup crushed tomatoes (pezzettoni) per serving
Season with oregano and pinch of cinnamon
Stir well as tomatoes reduce, about 5 minutes.
Before tomatoes lose their juices, add rice.
Stir to heat and coat rice.
Serve at once.
