Fettucine/Lasagne

Fettucine/Lasagne Noodles

 

Preparation Time: 2 hours

Yield: 4 cups of cooked noodles. Double recipe to make one 9x14" lasagne

 

Combine:

one beaten egg

1 tablespoon white wine

1/2 teaspoon salt

1 teaspoon walnut or peanut oil

Pour into bowl containing 2/3 cup all-purpose (Robin Hood) flour

Kneed together until it comes clean from your hands.

Then kneed for 10 minutes.

Let it stand in a bowl covered with plastic wrap for 1 hour.

Roll the dough, stretching it until you can see the pattern of the countertop through the dough.

Let it dry about 30 minutes but don't let it become brittle.

Cut the dough into baby-finger width strips.

Cook in boiling water 5 - 10 minutes, testing by taste.

Noodles should be slightly chewey but not tasting of flour. Overdone pasta squishes between your tongue and the roof of your mouth.

Serve with Beef Stroganoff or with Meat Sauce.
