CORNISH HENS

 

Preparation Times: 2 hours

Yield: One serving per hen

 

Easy Version:

Buy Hen, thaw hen overnight in fridge, wash hen.

Prick hen all over with skewer to pierce skin and release grease as it cooks.

 Bake in 350 ° F oven for 60 minutes and enjoy

 

Harder Version:

(I can't believe I used to have time to do this!)

Follow instructions above but stuff with this dressing before baking:

Soak 1/2 cup of raisins in 1/4 cup cognac for an hour. Drain.

Saute raisins in butter and remove from pan.

Saute 1/2 cup fresh mushrooms in butter and white wine. Remove from pan.

Heat 1/2 cup of previously cooked rice in pan,

add mushrooms and raisins and 1/8 cup chopped walnuts.

Stuff well-cleaned hens and bake for 90 min at 325 ° F oven.

Serve with baked potato and French Bread.
