Chicken Schnitzel
Preparation Time: 15 minutes, 40 min for artery-friendly version*
Pound to flatten one chicken breast, or better yet, buy a chicken breast filet.
Dip in beaten egg.
Dip in breadcrumbs seasoned with your choice of chicken spices.
Heat pan and fill with enough melted butter to cover base of pan.
Cook over low-medium heat, turning frequently, until slightly browned.
Serve with vegetables.
*Artery-friendly version:
Prepare as above but bake uncovered on baking-rack in 350ºF oven for 30 minutes.
Remove from oven and top with freshly grated Parmesan or Swiss cheese and serve.
