POULTRY ROLLS
Preparation Time: 1.25-1.75 hours
Yield: One serving per chicken breast
Pound to flatten deboned skinless chicken breast
or scalloped turkey.
Prepared bowls of beaten egg and seasoned bread crumbs
Dip breast in beaten egg
Coat breast with seasoned bread crumbs
Lay flat and sprinkle with dried grated Parmesan Cheese
(Freshly grated works well too but imparts less flavour)
Roll up the breast to create a tube and wrap it in aluminium foil
Bake for 45 min at 350° F, remove from foil and bake on rack for an additional 10-15 min
for a small breast, or 60 min plus 10-15 min for a large breast.
Cut into coins and serve on bed of Oven Rice or with baked potato.
