CHICKEN AND VEGETABLE BONANZA
The best of my stir-fry inventions:
Cooking time: 30 minutes
Yield: One serving per 1/2 cup of chicken, 1 cup of vegetables and mushrooms.
In a shallow pan, melt 2 - 3 tablespoons of butter, seasoned with nutmeg, over medium heat.
Add 1 cup of sliced Crimini mushrooms and cover.
When mushrooms have sweated out (4-5 minutes) remove lid.
Stir to prevent burning and continue cooking until mushrooms have absorbed liquid.
Removed mushrooms from pan and add 1/2 cup of cubed chicken thighs.
Microwave 1 cup of frozen vegetables (broccoli, cauliflower, carrots) for 3 minutes on high
in a covered bowl.
When chicken has browned, add cooked mushrooms and vegetables.
Stir to reheat mushrooms and vegetables.
Season with a quality soya sauce.
Serve and enjoy by itself.
